Using some of the chicken stock, we added shredded cooked chicken, carrots, corn, thyme and dumplings to make a delicious, filling soup for dinner tonight. The dumplings were absolutely beautiful, and gave a really nice texture to the soup, making it very filling.
Dumplings - mix together 2 cups of plain flour, half a teaspoon of baking powder, 2 teaspoons of butter, gradually add just under a cup of milk, and knead to form a smooth dough. Roll out thinly, and using a pizza cutter or a knife, cut into 2 inch squares. Add dumplings one at a time to prevent sticking, to the stock, chicken and vegies, bring to a boil, then reduce heat to a simmer and cook for about 25 minutes.
