》》HOME MADE GRANOLA《《 Yesterday I did some meal prep, and this morning I reaped the rewards of my efforts. May I present to you, home-made granola, with coconut yoghurt, fresh raspberries and dates.
There is no recipe or measurements for the granola as it is literally a throw-together of things I had sitting in my pantry; rolled oats, quick cook oats, shredded coconut, flax seeds, almonds, walnuts, chia seeds, pumpkin seeds, sunflower seeds, cinnamon, almond meal and the remaining half a serve of vanilla protein powder which has been floating around my pantry for the past few months, and a pinch of salt. Mixed together with some macadamia oil and maple syrup, enough so it resembles a crumbly texture much like a biscuit base for a cheesecake. Tip it onto a baking tray lined with baking paper, and pop it in a pre-heated oven 150 degrees Celcius, for about 25-30 mins (depending on how crunchy you like it), mixing it around every 10 or so minutes so that it doesn't burn. Take it out of the oven once you're happy with the texture and let it cool, then pop it in an air-tight container and store in the pantry.
You'll note that I didn't use any dried fruit in my mix for 3 reasons: 1) They burn really easy when cooked in the oven, 2) I didn't want to make it too sweet because once you add fresh fruit when serving, it's just sweet enough, and 3) I didn't have any in my pantry!
To serve, I just added some yoghurt, fresh berries and dates, and it was so delicious and quick!
It's such a great way to start your day as it is high in fibre, and not only does it deliver a pretty great dose of essential fats, protein, antioxidants, vitamins and minerals, it will assist with hormone regulation, blood sugar regulation and energy balance throughout your morning.
