Lol!! I kind of laugh when people say they put filters on their pics to make them look better!! I wish I had that ability... but between the lighting and the wrinkles, this is the best you get!! Lol! . I just made some Golden Milk. I keep reading about all the healing benefits of it. It doesn't taste awful, not my favorite though. I will definitely try it again tomorrow. . Who has tried it before?

So adding this to my meal plan this week!! Best Ever Chorizo & Vegetable Stew Author: Irena Macri Recipe type: Main Prep time:  10 mins Cook time:  30 mins Total time:  40 mins Serves: 3 Ingredients * 1 tablespoon coconut oil * 1 large brown onion, roughly diced * 2 medium chorizo sausages (about 150-200 g /5-6 oz each), skin peeled off and sliced * 1 large carrot, sliced * 1 large pointy red pepper (bell pepper/capsicum), seeds out and diced * 1 large celery stick, sliced * 2 medium white potatoes, peeled and diced * 1 large tomato, diced * 2 large cloves of garlic, diced * 2 cups chicken stock * 1 tablespoon lemon juice * 1 medium zucchini, diced * sea salt and pepper * handful of fresh parsley, chopped Instructions 1. Prepare all the ingredients first. 2. Heat coconut oil in a medium saucepan over medium-high heat. Add the onion, chorizo, carrot and celery and sauté for 2-3 minutes, stirring frequently, until slightly softened and golden. Chorizo will start to release some fat, in which the vegetables will cook. 3. Then add the potato, red peppers, tomatoes and garlic and stir through for a minute. 4. Pour in the stock and lemon juice, stir and cover with a lid to bring to boil. Turn the heat to medium and cook, covered with a lid, for 10 minutes. 5. Then add the zucchini and a little black pepper. Stir through and cook over low-medium heat for a further 10 minutes. 6. By this stage the potato should soften up and thicken the sauce. Uncover the pot and bring the heat back to medium-high for 2 minutes, stir through. Then take off the heat and add freshly chopped parsley. 7. Serve as is or with a side of steamed or sautéed greens.

I'm sooo trying this next week!! . Ingredients * 4 (6 ounces or 170 grams each) boneless, skinless chicken breasts * 1/2 teaspoon salt, divided * 1/2 teaspoon pepper, divided * 3 medium zucchini or yellow summer squash, roughly chopped (588 grams total) * 1 medium (110 grams) onion, roughly chopped * 1 cup hummus (246 grams), homemade or store-bought (certified gluten-free if necessary) * 1 tablespoon olive oil * 1 teaspoon paprika, divided * 1 lemon, quartered Directions Preheat oven to 450 degrees F. Spray two glass baking dishes with cooking spray. While oven is preheating, pat the chicken dry. Season chicken breast with 1/4 teaspoon salt and 1/4 teaspoon pepper. Add the chicken breast and hummus into a small bowl and toss until well-coated. In a glass baking pan, toss the zucchini and onion with olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper until coated. Pat vegetables down until it makes an even layer in the baking pan. Sprinkle with 1/2 teaspoon paprika. Bake for 15 minutes. In the second glass baking dish, add the chicken breast. Sprinkle with 1/2 teaspoon paprika. Place both baking dishes into the oven at 450 degrees F. Bake the vegetables for about 15 minutes, and bake the chicken for about 20 minutes. Serve each chicken breast with about 3/4 cup of vegetables and 1 lemon wedge. Yum!!!! . I've been struggling in the afternoon! I do great in the morning, I shut down the kitchen after dinner, I even stay on track during dinner. The afternoon is tough because I just don't have a good protein that I want to eat! . I miss hardboiled eggs!!! . But, today j got some Chocolate Bone Broth powder, mixed it with 8oz unsweetened coconut milk and 1/2 a cup of frozen cherries!! My belly is full! I feel like I had a yummy treat and it was healthy!! . Woohoo!!!

BANANA BERRY CRUNCH BAKED OATMEAL 10 min - Prep Time 45 min - Cook Time 55 min- Total Time Ingredients 1 tablespoon coconut oil 2 cups rolled oats 1 teaspoon baking powder 2 teaspoons ground cinnamon pinch of salt 1/4 cup coarsely chopped pecans 1/2 cup fresh blueberries 1 large banana, peeled and sliced 1 large egg or 1 flax egg 1/3 cup maple syrup 2 teaspoons vanilla extract 2 cups coconut milk* Instructions 1. Preheat the oven to 375 degrees F. Grease an 8-inch square baking dish with coconut oil. 2. In a large bowl, mix together the oats, baking powder, cinnamon, salt and pecans. Pour into the baking dish. Layer the berries and sliced bananas over the top of the oats, spreading evenly. 3. In a small bowl, whisk together the egg, maple syrup, vanilla extract and coconut milk. Mix until well combined. Slowly pour over the oats. Bake for 30 to 35 minutes, or until the top is golden brown. Allow to cool slightly before serving. Enjoy! Another flavor that I love!! . As I began researching Adrenal Fatigue and how to heal my body, there was a lot of talk about kefir and fermented foods. The kefir that I was familiar with has dairy in it and that was a no go! . And, sauerkraut was more of of New Years Day food! Though I bought some recently, I just haven't been able to talk myself into eating it! . I saw these KeVita drinks, checked the ingredient list and decided to give it a try! Today is Day 4 of having 1 a day... not even sure if I'm doing it right. But, I wanted to know why this was so important! . I found that eating fermented foods, like this tasty beverage introduces healthy bacteria into the digestive tract and helps balance the bacteria. And, the probiotics slow and reverse some diseases, improve bowel health, aid digestion and improve immunity!! Win-Win-Win-Win! . When we have proper gut health, our bodies are better able to absorb the nutrients we eat. Woohoo!! . So, I think this will be a regular staple in my diet, since I'm still cringing thinking about the sauerkraut!

I tried, I really did. I just don't like salmon! . Now, this wasn't the exact recipe I used, but I was going for something like it! . In case you'd like to try it, here's the recipe! . Grilled Lime Salmon with Avocado-Mango Salsa and Coconut Rice Yield: 4 servings Ingredients Lime Salmon 4 (6 oz) skinless salmon fillets 3 Tbsp olive oil, plus more for grill 2 tsp lime zest 3 Tbsp fresh lime juice 3 cloves garlic, crushed Salt and freshly ground black pepper, to taste . Coconut Rice 1 1/2 cups Zico Coconut Water 1 1/4 cups canned coconut milk 1 1/2 cups jasmine rice, rinsed well and drained well 1/2 tsp salt . Avocado-Mango Salsa 1 large mango, peeled and diced 1 cup chopped red bell pepper (1/2 large) 1/4 cup chopped fresh cilantro 1/3 cup chopped red onion, rinsed under water and drained 1 large avocado, peeled and diced 1 Tbsp fresh lime juice 1 Tbsp olive oil 1 Tbsp Zico Coconut Water Salt and pepper, to taste . Directions For the salmon: In an 11x7-inch baking dish whisk together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste (a fair amount of each). Place salmon in baking dish, cover and allow to marinate in refrigerator 15 - 30 minutes, then flip salmon to opposite side and allow to marinate 15 - 30 minutes longer. Preheat a grill over medium-high heat during last 10 minutes of marinating. Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through (turn carefully as the salmon will be fragile). For the coconut rice: While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice and salt to a full boil. Cover and simmer until liquid has been absorbed (there may be just a little bit of excess liquid in center which you can drain off), about 20 minutes. Fluff with a fork, then let rest 5 minutes. For the avocado-mango salsa: While the salmon is grilling prepare salsa. In a medium bowl toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water. We have a Winning combo!!!! . I saw my doctor again yesterday to go over my blood work and food test. I have to stay away from all foods that I reacted to... for the 2s and 3s - 6 months... the 1s I can reintroduce one at a time to see how it impacts me, if I'm really missing them, after 3 weeks! . She believes I have a little bit of a leaky gut and we talked about Bone Broth. I've been reading about all the benefits, I was drinking it daily and felt good, just wasn't a huge fan of the taste! . I picked up some powder Bone Broth yesterday at Earth Fare and added it to my Shakeology today and I didn't even taste it!! I'm sooo excited!! . I used to knock shakes! I was the person that said I would rather eat my calories than drink them! Or... I want to eat real food. Or... I need to chew my food! 😂 But, after reading about food and what our food is doing to us, I'm sooo glad that I found 2 reputable companies that have taken the time to properly dry super foods and grind into a powder form so I can fuel my body in a simple shake form, and so cost effectively! . All of my blood work looked great!! My doctor was so pleased! My thyroid was slightly off, so I'm on a supplement for that! And, I'm just removing those foods that my body is not liking! We will follow up when the last test comes back... which will confirm if I have Adrenal Fatigue. . Are you a fan or skeptic of Shakes?
